WE ARE OPEN ALL YEAR AROUND, BUT OUR HARVESTING STARTS IN MID-LATE OCTOBER AFTER A HARD FREEZE,

1 CUP SYRUP
1TSP VANILLA
2 TBSP MELTED BUTTER
1 CUP SUGAR
1/8 TSP SALT
1 CUP PECANS
ROLL PASTRY 1/8 INCH THICK
LINE A 9 INCH PIE PAN, MIX REMAINING INGREDIENTS TOGETHER, ADDING PECANS LAST, POUR INTO SHELL BAKE IN A HOT OVEN [400 DEGREES F., FOR 15 MINUTES
REDUCE HEAT TO 350 DEGREES AND BAKE30 – 35 MIN. LONGER

APPLETS
6 LARGE MICHIGAN APPLES
1/3 CUP BOILING WATER
2 CUPS SUGAR
2 TBSP GELATIN
½ CUP COLD WATER
¼ ORANGE EXTRACT
1 CUP CHOPPED PECANS
POWDERED SUGAR
PLACE APPLES QUARTERED IN A PAN WITH 1/3 CUP BOILING
COOK, UNTIL MUSHY
STRAIN APPLESAUCE [2 CUPS]
ADD SUGAR AND COOK SLOWLY UNTIL MISTURE IS VERY THICK
SPRINKLE GELATIN IN COLD WATER AND LET STAND.
REMOVE APPLESAUCE FROM HEAT, ADD GELATIN; STIR WELL
ADD NUTMEATS AND FLAVOERING AND POUR INTO BUTTERED PAN
LET STAND UNTIL FIRM. CUT INTO SQUARES, AND ROLL INTO SUGAR
LET DRY OUT AN HOUR AND ROLL AGAIN.

BUTTERMILK PRALINES
2 CUPS GRANULATED SUGAR
1 CUP BUTTERMILK
1TSP SODA
1 TBSP LIGHT SYRUP
2 TBSP BUTTER
2 TSP VANILLA
2 CUPS PECAN HALVES
BOIL SUGAR, BUTTERMILK SODA AND LIGHTSYRUP, IN A LARGE PAN TO THE SOFT BALL STAGE
REMOVE FROM HEAT AND STIR IN THE BUTTER, VANILLA AND PECANS
COOL, STIRRING FREQUENTLY UNTIL IT CAN BE DROPPED ONTO FOIL.
WORK QUICKLY, AS IT SET UP FAST, MAKES 16 – 18 PRALINES.

SALTED PECANS
MELT 2 TBSP BUTTER, IN A HEAVY SKILLET OVER LOW HEAT
ADD 1 CUP PECANS AND STIR UNTIL HOT, AVOID OVERCOOKING BECAUSE PECANS DARKEN AFTER BEING REMOVED FROM THE FAT.
DRAIN ON A PAPER TOWEL
SPRINKLE LIGHTLY WITH SALT WHILE STILL WARM.

1 CAN MUSHROOM SOUP
1 CAN CHICKEN SOUP
1 CAN TUNA FISH
1 CAN EVAPORATE MILK
1 CAN CHOW MEIN NOODLES
1 CUP FINELY CUT CELERY
BAKE IN CASSEROLE DISH, IN A PAN OF HOT WATER FOR 1
1 HOUR AT 350 DEGREES. SERVE WITH A SALAD AND ROLL.
